Ride from Golden Gardens to the Olympic Sculpture Park, then around the Magnolia Loop (clockwise) to the Locks and to Market Street for lunch at Kiss Cafe.  Bring a bike lock and a smile.

For example, a long-distance ride with a lot of elevation gain will be overall less challenging than a short ride with equal elevation gain.
